Summer Fruit Crumble

Ever since we started blogging, I've been paying more attention to all the wonderful food bloggers out there. Just today, inspired by a fellow food blogger, I threw together a berry crumble this afternoon. Stuffed with peaches.

Clearly, summer is the best time to make fruit desserts. The abundance of fresh fruit makes it cheap and easy. Head over to the local farmers market or grocery store and pick up whatever is fresh and strikes your fancy.

For the crumble topping, mix approximately 1 1/2 cup oatmeal, 1/3 cup flour, 2 tablespoons canola oil, 2 tablespoons maple syrup, 1 teaspoon vanilla, 1 tablespoon water, and pinches here and there of cinnamon, nutmeg, and salt.

In a separate bowl, chop up the larger fruit, mix with a little cinnamon, nutmeg, clove, and something sweet: brown sugar, honey or maple syrup. Scoop some of the crumble mixture into the berry mix and stir.

Fill some ramekins (or a pie dish) with the berry mix and then top with the crumble. Pack down. Bake in a 350 F oven for at least a half hour, or until the juices happily overflow the sides.
