DOW: Champagne Cocktail

Since we had a bottle of cava open, we thought we'd try another bubbly cocktail. The classic champagne cocktail immediately came to mind.
- 1 sugar cube or 1/2 teaspoon superfine sugar
- 2-3 dashes Angostura bitters
- 1 oz brandy
- Champagne or other dry sparkling wine
- maraschino cherry for garnish
Combine the first three ingredients in a champagne flute.
Fill the glass with the sparkling wine. Add a maraschino cherry for garnish if you wish.
Next time we make this drink, I think I'll have to break down and buy sugar cubes. Somehow I think I will sit in fascination, watching the tiny bubbles rising off the sugar cube.
