DOW: Watermelon Mojito

Inspired by Ina Garten's how easy is that? recipe book, we bought a whole watermelon to make watermelon mojitos. Yes, watermelons are not in season locally yet, but we thought we could try to hasten the arrival of summer.

  • 1/3 cup fresh watermelon juice
  • 5-7 mint leaves
  • 1 tablespoon berry sugar
  • 2 oz light rum
  • juice of 1/2 lime
In a blender or food processor, purée watermelon. Set aside. In a cocktail shaker, muddle mint leaves with sugar, lime juice and rum. Half-fill a glass with ice cubes. Add mint mixture and watermelon juice and stir.
