Peppermint Chocolate Bark

Simple and special, this chocolate bark with crushed candy canes on top will make you spontaneously sing Christmas carols. At least it did for me....

  • one 12 oz bag of Enjoy Life or other chocolate chips
  • 3/4 teaspoon peppermint extract
  • 3 or 4 (or 12) candy canes (only go for the dozen if you want extras, lots and lots of extras)
Hammer the candy canes in to itsy-bitsy pieces. We used a wooden mallet and a cloth napkin.

Melt the chocolate in a double boiler. Stir in peppermint extract. Using a rubber spatula, spread onto a baking sheet covered with wax paper.

Sprinkle the broken candy cane pieces over the chocolate.

Freeze until hardened, break into pieces, and "Step into Christmas!"
